If we were having coffee this morning, I’d bring some peanut butter crisps with me while we catch up on our lives.
These mini treats have a rich peanut buttery flavor, little fudgy & slightly crispy – perfect with a cup of joe (or milk) and it’s super addictive! To make things extra special I dipped them in dark chocolate & finished it off with a few sprinkles of sea salt.. You already want a piece or ten right now – don’t you?

If we were having coffee this morning, I’d tell you that I got accepted into Graduate School for Fall. I’d tell you how I am excited & little anxious. As a warning, I ‘d also let you know that I will be coming for time management advice frequently and ranting a lot.
If we were having coffee this morning, I’d tell you about an incident that involves spicy dinner and a couple of things I learned.. I invited a friend for dinner and wanted to made extra special Green Curry..but in between tasting things here and adding green curry paste there, it ended up being too spicy like throat burning spicy and I learned not to taste food too much while cooking. Always have a plan B. Brown sugar & coconut milk does not always solve problems. However, having unlimited supply of peanut butter crisps does solve some problem, especially for unforeseen circumstances like this one.

Peanut Butter Crisps
about 36 cubes
Ingredients
2 cups rice crispy cereal
1 cup creamy peanut butter
1/4 cup butter
1 cup tagatose (or use 1.5-2 cups regular sugar)
4-6 oz dark chocolate
seal salt (optional)
Directions
– In a small sauce pan, over low-medium heat melt peanut butter and butter together until its completely melted and smooth.
– In a bowl mix rice crispy cereal and sugar, then pour melted peanut butter and butter over rice crispy bowl. Mix them together.
– Melt chocolate in double boiler. Once chocolate is completely melted, dip squares in chocolate and sprinkle sea salt. Place them on a greased or lined cookie sheet returning to the fridge until firm and chocolate hardens.
