..so on that sad summery note I will share a vegan, cherry chia smoothie that cheered me up instantly. I am using a seasonal fruit, cherry, because at this time of the year they are so flavorful and has a chockfull of vitamins, minerals and antioxidants. Chia seeds bulks up a smoothie and are a great source of omega 3 and fiber.
Chia seeds can be eaten by itself or used in pudding, salads, casserole, and soups!
Vegan Cherry Chia Smoothie
- cup unsweetened almond milk
- 1.5 cup frozen cherries
- 1 tablespoon chia seeds
- Pour milk in a glass, add chia seed and allow it to thicken up.In a meanwhile, add frozen cherries in to the blender and pour milk and chia seeds together. Blend until everything is smooth. Serve chilled.
Cherry Chia Smoothie
makes about 2 cups
1 cup unsweetened almond milk (use other milk of your choice)
1.5 cups cherries, fresh (about 30 cherries)
1 tablespoon chia seed
1-2 drops liquid stevia (optional)
-Pour milk in a glass, add chia seed and allow it to thicken up.
-In a meanwhile, pit cherries using a pitter or this method.
-Pour all the ingredients in the blender until smooth.
