For the Recipe Redux this month, our theme is to use our favorite seeds in a recipe reflecting the season in your part of the globe.I don’t even want to talk about season in my part of the globe right now because I live in Dallas, Texas – let’s just say I am very lucky to have an air conditioning where ever I go because we are close to getting three-digit temperature. So basically there is not a lot going on here except staying indoors with the AC on full blast & wondering what it would be like at the beach, sipping on tropical beverages. But sadly for us – it’s couple more months of brutal heat, tripled electricity bills, and lots of smoothies.
..so on that sad summery note I will share a vegan, cherry chia smoothie that cheered me up instantly. I am using a seasonal fruit, cherry, because at this time of the year they are so flavorful and has a chockfull of vitamins, minerals and antioxidants. Chia seeds bulks up a smoothie and are a great source of omega 3 and fiber.
Chia seeds can be eaten by itself or used in pudding, salads, casserole, and soups!
Pour milk in a glass, add chia seed and allow it to thicken up.In a meanwhile, add frozen cherries in to the blender and pour milk and chia seeds together. Blend until everything is smooth. Serve chilled.
Cherry Chia Smoothie
makes about 2 cups
Ingredients 1 cup unsweetened almond milk (use other milk of your choice) 1.5 cups cherries, fresh (about 30 cherries) 1 tablespoon chia seed 1-2 drops liquid stevia (optional)
Directions -Pour milk in a glass, add chia seed and allow it to thicken up. -In a meanwhile, pit cherries using a pitter or this method. -Pour all the ingredients in the blender until smooth. -Serve chilled.
