Seared Lamb Chops with Rosemary Red Wine Reduction {Valentines Day}

T minus 2 days for the Valentine’s Day

… and I am not sure how I feel about this world wide celebration of Valentine’s day to show extra loving and caring for the loved ones ? Part of me thinks its too commercialized, cheesy and want to ignore the whole thing but again, there’s this romantic side of me telling me to suck it up, enjoy the pink & red decor everywhere & plan something special with my Valentine..

Still not sure what the plan is – well, that shows how excited we are about February 14th right? I am certainly not looking to dine at a super crowded restaurant or be served by a pissy waitstaff. Also, the whole idea of re-doing makeup and hair on a weekday does not sound romantic at all. Lame as some of you may think but honestly my idea of romantic is quiet evening with just the two of us, home cooked meal and sweat pants. Okay a bottle of wine & chocolate..such a cliche, but isn’t that what Valentines Day is all about.

I am most likely going to make seared lamb chops with rosemary balsamic reduction adapted from Emeril Lagasse‘s recipe again because it symbolizes us – we both love lamb a lot and enjoy cooking together. I could not think of a better way to celebrate our togetherness other than with this dish because it’s simple like our life yet has a deep flavor from rosemary just like our love and the reduction is an extra zing & happiness we share with each other every day. I substituted balsamic with sweet wine reduction. Roasted potatoes and brussels sprouts makes a great side with this lamb.

What are your plans for the V-Day?
It does not matter if you are dining in or out, dressing up or down, make up or messy hair, I think it’s more important to spend quality time with your loved ones, friends, and families cherishing each and every moment together, thanking them for all they do and telling them one more time how much they mean to you. Happy Valentines Day Everyone
