Raw Energy Bites

I had a happy and not-so-happy incident in the kitchen yesterday. While I was cooking I was waiting on my green bean fries, with wasabi dipping sauce ready too! However it was all for not, because I burnt them and they were far from being crispy. If anyone has a recipe, please please please send it my way..anyways forget the green bean fries, let’s talk about ‘raw energy bites’ that fits every kind of diet unless you are on a starving diet or have a nut allergy. 

These bites are inspired by Lara Bars and has nothing but nuts and dried fruits. I am using dried apricots, dates, and mixed nuts but feel free to experiment with your favorite dried fruits and nuts. 

 

 

I am really bad when it comes to snacking..you will find me mindlessly eating nuts straight from the jar, bag of chips (my favorite are Cheetos) or whatever is in front of me. I hope having these energy bites around will save me from doing so and give me the fuel I need before a workout as well. 

Raw Energy Bites
makes about 12 bites

Ingredients

1/4 cup dried apricots
1/4 cup dates
1 cup mix nuts ( I used roasted/salted variety)
1/2 tsp almond extract (or vanilla but its optional)
2 tsp unsweetened cacao powder (optional)

Directions

– Soak dried apricot and dates in water until they are soft (I left mine overnight).
– In a food processor, grind nuts until they have a mealy texture and place them in a bowl.
– Squeeze water from dried fruits and place them in a food processer and grind them until they are slightly mushed. 
– Combine them with nuts using a spatula. Add almond extract and unsweetened cacao to the mix if desired.
– Leave it in the refrigerator for 10 minutes, covered if the mixture feels liquidy, otherwise form them into balls. I used individual mini muffin liners to prevent them from sticking. 
-Store them in an airtight container. {note: I found that they taste even better when frozen}
