No Bake Cheesecake with Blueberries

 

I made this cheesecake just for you..my best friend, my soul sister, and my rock. And because its your birthday. It’s your day. 

Although we live on different continents I am so blessed that our friendship has not changed since we first met in 7th grade…I don’t tell you as often but you should know that your humor, interests, and passion in life never cease to amaze me..We have shared laughter, joy, and heart breaks together.. We have fought, fallen, and risen..It’s not the distance or absence that matters..but I treasure the times we have been through thick and thin always supporting, loving, understanding, and believing…

 

 

 

 

This No Bake Cheesecake (although virtual) is one way to let you know how special you are to me – then, now, and always. You may not have access to the oven right now but I want to let you know I am here to help you find ways to make delicious things to sweeten up your life – with or without the oven.

But what I hope the most right now is to share this cheesecake with you, sitting by the big window in your room talking about some rock song, our latest crush, or simply be silly. I miss you friend. Have a wonderful birthday.

With or without berries, this cheesecake is very delicious, lighter than regular cheesecake yet very luscious. It’s perfect for a single serving and great for parties as it can be made ahead of time.
No Bake Cheesecake with Blueberries
For 2 mini tart
Ingredients
2 oz packaged cream cheese, softened (I used reduced fat)
1 tablespoon + 1 tsp regular sugar
1/2 cup frozen whipped topping, thawed (I used light version)
1/2 teaspoon  pure vanilla extract
2- mini prepared graham cracker crust (or make from scratch)
about 1/2 cup of blueberries (may use other berries)
Directions
– Using a fork, beat softened cream cheese, sugar, and vanilla extract together until smooth. 
– Slowly fold in whipped topping. 
– Spoon the mixture into the crust and refrigerate for 2 hours or more until cheesecake sets completely. 
– Garnish with blueberries.  

No-Bake Strawberry Cheesecake

  • 1 (8 ounce) package cream cheese, softened
  • 1/3 cup white sugar
  • 1 (12 ounce) container frozen whipped topping, thawed
  • 1 (9 inch) prepared graham cracker crust
  • 1/2 pint sliced fresh Florida strawberries
Beat cream cheese and sugar until smooth. Fold in whipped topping. Spoon mixture into graham crumb crust. Refrigerate for 2 hours. Once the cheesecake has set, garnish with sliced strawberries and serve. For even more strawberry flavor, try adding our strawberry syrup to the top of the cheesecake while it chills in the refrigerator.
Don’t forget this recipe in the summer months when you don’t want to heat up your kitchen. In that case, substitute the sliced fresh Florida strawberries with thawed and macerated Florida strawberries for that familiar Florida taste!
