Lunchbox Chicken Avocado Salad Wrap is a healthier take on classic chicken salad as we are substituting mayo with avocado and plain non-fat yogurt (Greek yogurt is fine too). Both avocado and yogurt lends a nice texture but I have added some tips for dairy-free version below. Tysons Refrigerated Fully Cooked Chicken Breast Strips are flavorful on it’s own so I didn’t need much except for little onion, salt, pepper, lemon juice and red chili powder for some heat, which is entirely optional.

Serves: 2 wraps
For Chicken Avocado Salad
6 oz. Tyson Refrigerated Fully Cooked Chicken Breast Strips, chopped into chunks
1 large avocado (make sure it is somewhat ripe)
1/4 cup non-fat plain yogurt (you can skip this for dairy-free version and add another avocado if desired)
2 tablespoon chopped onion
1 tablespoon lemon juice
salt, pepper, and red chili pepper, to taste
For a wrap
2 tablespoon non fat, plain yogurt (hummus works too)
4-6 butter lettuce or something similar
use flatbread, tortilla, or your choice of wrap or bread
Combine everything in a medium bowl and set it aside. Taste and adjust seasonings if necessary.
Spread about 1 tablespoon yogurt at the edge of your wrap.
Place lettuce on the other edge and top it with half of chicken avocado salad on top.
Tightly wrap the flatbread to make into a wrap.
Cut into half or pinwheel size if desired.
If packing for lunch, I’d suggest tightly wrapping in a plastic wrap or something similar.
