Kimchi Fried Rice

Kimchi Fried Rice is a simple, quick Korean inspired dish with rice & kimchi. You can enjoy it with eggs, tofu, or other meat for a wholesome meal. 
Most of my friends and families know that I have a food blog and they always compliment me about my photography and delicious recipes, which I am very grateful for. During our conversation, some of them tell me about their poor eating habits, or their disinterest in cooking, and how my boyfriend is lucky to be surrounded by so much good food. I almost always respond back by telling them how the internet has made it easy for us to portray life perfectly but honestly, food blogging is only a glimpse into my life and it’s definitely not perfect/always healthy/pretty. I don’t want anyone to feel bad or guilty about their dinner when they see me post kale salad with pretty toppings. Instead I want them to feel inspired and curious about recipes and also fully acknowledge that I am not always eating kale on that pretty plate. I have dishes piled up that are never photographed, and I eat stupidly simple mix-matched things/take-outs/left-overs just like you. And I am sure most food bloggers will agree with me, which is why I’d like to share Kimchi Fried Rice. It may not be a super creative recipe but truly depicts what I ate three days in a row last week straight out of the bowl!



5 Things You Should Do For Better Gut Health

Kimchi is not something I grew up eating but it reminds me of fermented daikon (mula ko achar in Nepali), which is probably why I like it. Kimchi is a tangy/sour/spicy Korean dish similar to sauerkraut with vegetables such as napa cabbage, cucumbers, daikon radish, carrots, bok choy and spices which are naturally allowed to ferment. You can read in further details here – you can make it at home or buy it at the Asian grocery store, which is what I do.



Kimchi is not only delicious but is also a good source of probiotics (these are the good bacterias to help your body fight off various infections) which supports our immune system and digestive health. There are 100’s of varieties of kimchi with different vegetables, spices, and other ingredients such as shrimp sauce, soy sauce etc so if you are strictly following a vegan/gluten-free diet – please read the ingredient list carefully!!



If you are one of those people who loves rice or always has extra rice in your fridge, this recipe is for you. It literally takes 10 minutes from start to finish and you can most definitely make a big batch and reheat the fried rice later on.  Feel free to top it with fried eggs/tofu/meat and a side of vegetable to make it a balanced meal.

Kimchi Fried Rice
Serves: 4
  • 4 cups cooked rice (use cold, 1-2 days old rice)
  • 1 medium onion, chopped
  • 2 cups chopped kimchi
  • 1 tablespoon oil
  • salt, pepper (as needed)
  • chopped scallions, optional
  1. In a large skillet, heat oil over medium heat. Saute onion until translucent then add kimchi.
  2. Allow kimchi to cook for 2-3 minutes then add rice and stir everything together.
  3. Cook for 2-3 minutes and season it as needed.
  4. Garnish it with scallions.
