Switch up your breakfast game with a fried egg & avocado sandwich. It’s simple, hearty, and great for a lazy morning.
There are basically two types of mornings in my life; mostly on the go with a smoothie or on the weekends, where I like to start things early but at a slow pace. I also make sure breakfast/brunch becomes the highlight of my day. I always have few ideas in my head and obviously being the indecisive person I am, the decision to make something sweet to savory changes every 10 seconds and I love the chaotic thinking process. I want to make a big deal about my eats because I love to cook, eat, and savor things when I can which mostly only happens on the weekend. Besides Shakshuka, I made Fried Egg & Avocado Sandwich which was pretty fuss-free but I am giving each component on the sandwich an extra attention making it an indulging weekend affair! Let’s get our weekend right or everyday if you have that extra 10 minutes to spare.
Fried Egg and Avocado Sandwich has three main components – your favorite toasted bread preferably something whole grain and hearty, fried eggs, and perfectly ripe avocados. It’s nothing complicated but does require little patience on your part. So, relax and make yourself a cup of tea (or coffee), turn on some music, and watch the bread get toasted.
If you are particular about your eggs, you need to know your pans, timings, and the heat from your stove top. I like my eggs on the runny side so I always cook them over low-medium heat and cover it half way through cooking so yolks are runny, but not too runny. I found this post to be super helpful but I think it takes little practice to perfect ‘your’ eggs.
Can we take a moment to talk about perfectly ripe avocados? Do you feel the sense of relief when you slice an avocado and it’s just ripe and barely soft but not too soft/brownish – those are disgusting..and the unripe ones make me angry. Anyone?
Pile up some greens to prevent bread from being soggy, followed by your eggs, and sliced avocados and bam – your ultimate breakfast sandwich is ready. In case you already don’t know, Valentine’s day falls on Sunday this year, which means you should totally include Fried Egg & Avocado Sandwich on your breakfast-in-bed menu.
For all the guys (I doubt I have any male readers but still), surprise your special someone with this sandwich even if you have no cooking skills. I know you can handle this. And ladies, this is a manly man breakfast with eggs and avocado but I will let bacon slide in here if you MUST. Only if you must.
And for my vegan friends, you should get on with an Avocado, Lettuce, and Tomato Sandwich!
Serves: 2
4 sliced of toast
2 large eggs
1 large avocado, sliced
handful of greens
2 pat of butter, divided
salt and pepper, to taste
In a skillet, melt butter over low-medium heat and toast bread until slightly brown on one side. Heat the bread on the other side.
In another pan, melt butter over low-medium heat and add eggs. Allow it to cook until the white starts to set. Season with salt and pepper. Cover the skillet and lower the heat even more if needed until yolk is cook and just set. Remove from heat.
Top the bread with greens, fried eggs, and sliced avocado and more salt, pepper if needed.
