Easiest Thin Crust Pizza

…so as of Monday, I officially started grad school. A new chapter, an attempt to juggle school, work, and life. I have talked over and over but it’s starting to become REAL.



There are deadlines and grades to worry about now. Leftovers and eating out will probably replace my meals. Even though I have not yet figured out the best time to study and my workout schedule – there is a plethora of positive energy around me, a strong feeling of determination and confidence. 



You may ask what does thin crust pizza have anything to do with my confidence? or being a grad student? Couple of things actually..If you need to boost up your confidence – use this no-fail recipe to make a thin crust pizza, I promise, you’ll get it right (given that you will follow the directions). And if you don’t have time or have a quiz due – this is your recipe. Save it right now because the rising time is zero – 1.5 hours. From my experience, if the dough is not allowed to rise, the resulting crust is less crispy and very flat.

Homemade Thin Crust Pizza  (recipe from here)
Makes two 10-inch pizzas

For the dough:
3/4 cups lukewarm water (microwave water for about 10-15 seconds)
1/2 teaspoon active-dry or instant yeast
2 cups bleached all-purpose flour
1 teaspoons salt
1 teaspoon dried basil
Combine the water and yeast in a mixing bowl, and stir to dissolve the yeast. 
– In another mixing bowl (such as KitchenAid), add flour, salt, basil with dough hook attached and stir them to mix.
– Slowly add water, mixing the flour until it forms into a solid dough. Increase the speed as necessary.
– Allow it to rise for about 30 – 45 minutes (or more if you have time) by covering it with a kitchen towel. 
– When ready to make the crust,  preheat the oven to 500 F.
– Divide the dough into two equal pieces, forming it into a large disk with your hands and lay it on the parchment paper.

– Stretch the dough out into a 10-12 inch circle on a piece of parchment paper with a thin layer of olive oil.
– Bake it for 5-7 minutes.
– Remove from the oven, spoon your favorite pizza sauce onto the center of the pizza and use the back of a spoon to spread it out to the edges. 
– Add on your toppings, bake for additional 4-6 minutes until the  crust is golden-brown and the cheese is melted.
– Remove the pizza from the oven and let it cool on a wire rack for about 5 minutes before slicing. 
-Repeat the same steps with the remaining dough or leave it in the refrigerator, covered for later use. 




For the toppings: I used store bought pasta sauce, sliced onions, finely shredded part-skim mozzarella cheese, and sliced mushrooms.
