Dietitian’s Favorite Weeknight Dinner Recipes

I hope you had a wonderful Thanksgiving. Both my heart and belly is content with delicious food and relaxing weekend, so naturally Monday (and the rest of this week) will be tough. Since this is one of the busiest time of the year with holiday parties and traveling, I want to arm you with some weeknight friendly recipes because let’s be honest – when things get hectic, eating out is hard to resist but we all know that it’s good for our health and wallet. Therefore, I have complied 10 go-to weeknight dinner recipes from dietitians around the web to make this holiday season little bit easier and healthier for you.



Vegan Burrito Bowl  via Dietitian Debbie –  “This is one of those meals that you could prep the ingredients over the weekend and toss together for an easy weeknight meal. Just reheat everything and set it out as a build-your-own-burrito-bar at home. No need to run out to chipotle to get your burrito bowl fix”.

{Nourish} DIY “Buddha Bowl” with Carrot Ginger Tahini Dressing via Healthy Bites – “It is a meal sized bowl that you can fill with a variety of nourishing goodies. The size helps with portion control and mindfulness and the fun part is that fact that you can make it your own”. 

Green Chilaquiles via Food, Pleasure, and Health – If you are into eggs + salsa combo, you will love this for dinner/brunch/lunch. To keep it vegan, substitute eggs with black beans/refried beans. Or, make these Kale, Leek, and Cheese Frittata ahead of time and simply reheat it. 



Vegetarian Lettuce Wraps with Amazing Peanut Sauce via The Nutty Nutritionist – “One bite of these lettuce wraps and you are never going back to those PF Changs wraps again!It’s vegan, low carb, and gluten-free, if you use gluten free soy sauce”.



Chicken Kebab Pita Sandwich with Lemon Tahini Dressing via Food, Pleasure, and Health – Kebabs can be eaten an appetizer, on a bed of rice/couscous with some roasted veggies or as a wrap. To keep things vegan, go with the hummus wrap instead!



Swiss Chard Basil Lasagna via Sharon Palmer – Veggie-rich lasagna recipe as easy as it is nutritious and delicious! Combine layers of tomatoes, swiss chard, and basil to create this scrumptious comfort food dish you won’t feel any guilt about! Plus, it’s 100% plant-based!”
