Dietitian’s Favorite Weeknight Dinner Recipes

I hope you had a wonderful Thanksgiving. Both my heart and belly is content with delicious food and relaxing weekend, so naturally Monday (and the rest of this week) will be tough. Since this is one of the busiest time of the year with holiday parties and traveling, I want to arm you with some weeknight friendly recipes because let’s be honest – when things get hectic, eating out is hard to resist but we all know that it’s good for our health and wallet. Therefore, I have complied 10 go-to weeknight dinner recipes from dietitians around the web to make this holiday season little bit easier and healthier for you.

 

 

Vegan Burrito Bowl  via Dietitian Debbie –  “This is one of those meals that you could prep the ingredients over the weekend and toss together for an easy weeknight meal. Just reheat everything and set it out as a build-your-own-burrito-bar at home. No need to run out to chipotle to get your burrito bowl fix”.

Green Chilaquiles via Food, Pleasure, and Health – If you are into eggs + salsa combo, you will love this for dinner/brunch/lunch. To keep it vegan, substitute eggs with black beans/refried beans. Or, make these Kale, Leek, and Cheese Frittata ahead of time and simply reheat it.
