Last week, I spend 4 days in Colorado – 3 different cities, drove around 300ish miles and it was probably the most relaxed I have been in a very long time! The trip was partly spur of the moment because the boyfriend & I really needed a getaway + it’s his birthday month so we thought why not. We flew into Denver, spent a day and a quarter and drove to Vail (about 100 miles west of Denver & has the largest ski mountain in Colorado), then spend a 1.5 days in Ft Collins (about 160 miles NE of Vail) visiting our close friends. We really didn’t do much – no touristy sightseeing, no agenda to follow and honestly, those trips are the best.
Decor + Service at Kimpton Hotel Monaco : A boutique hotel in downtown.with really neatl decor and everyone was so nice!!! I’d totally stay here next time. PS. they also provide a complimentary yoga mat in the room.
Ambiance + Service at Linger : A former mortuary turned into an hip, high-energy restaurant that serves shared-international plates. The menu is really unique divided into regions like Asia, Africa & Middle East, India, Europe & Eurasia. I wasn’t too crazy about the food but it was an exciting experience!

Retrograde : Really chill speakeasy inside an ice cream shop in uptown.
Tattered Cover Book Store : It was such a treat to come across a large indie bookstore with all things books and cozy space. I wish we had a bookstore here in FW.
Vail Village : A pedestrian-friendly village with a classic European alpine architecture. It was seriously a postcard perfect town filled with mountain fresh air, shimmering lights, & snow-dusted trees. They have country’s largest free transportation system (although we didnt take any) and I really enjoyed not having to drive anywhere. It’s very ski and snowboard focused town but there are plenty of restaurants, boutiques, and shops if you want to stroll around. You can take a (expensive) scenic unlimited gondola ride if you’d like for $84 per person per 10-12 minutes.
Standard Mountain : Dinner here was amazing + we got lucky to eat here as we had no reservation. They utilize the the most primal cooking method, cooking over an open and live wood fire using lots of regional ingredients. The service was top notch too!
Crespelle // Loaded Joe’s // Mountain Cupcakes // Vail Brewing Co : We made a pit stop at these places and enjoyed our crepes, coffee, & cupcakes!
Friends : Some of my best friends are from college so it’s always so nice to see them, hang out, and do absolutely nothing. We brunched at lucile’s creole cafe and enjoyed biscuit + beignet a little too much.
New Belgium Brewery : 4th largest micro-brewery in the nation, 100% employee owned, and their tour is so much fun.
Ft Collins Vibe : It felt like a very community-oriented, relaxed town with so much beauty! Also, when do you really see a town with 47 1/2..
This was 4th or 5th time to Colorado and it’s never enough. I was mentally prepared for a really cold weather but surprisingly, it was gorgeous. It snowed briefly in Denver but otherwise, the drive to Vail & Ft Collins was more than pleasant. The mountains, high altitude, and the greenery reminds me of Nepal, which is probably I heart you so much Colorado.
