Chocolate Covered Candied Ginger

I woke up Saturday morning to find out that this baby of mine Food, Pleasure, and Health won the “Best Food Blog 2013” hosted by nepaliaustralian. Thank you so much everyone for your votes, support, and love. Let’s celebrate it with something sweet (obviously).

 

 

This is my first time trying candied ginger and I absolutely loved it. I have been addicted to them lately and wanted to do something different with it. I read that candied ginger can be used to make syrup for drinks, chopped finely into baked goods or enjoyed by dipping in chocolate.

 

 

Ginger has been used in traditional medicine for upset stomach and easing nausea. Just be mindful of the bucket load of sugar in candied ginger though. I bought candied ginger from a store but turns out its pretty easy to make at home as well.

 

 

Dip them in chocolate fully or only half way..however you want. I hope it will sweeten your day just like it did mine.

Chocolate Covered Candied Ginger

Ingredients
1/4 cup dark chocolate chips (or use your favorite chocolate)
20 candied ginger pieces

Directions
In a bowl, add chocolate chips and use a water bath to melt the chocolate or microwave it in 15-20 seconds interval 3 times stirring them in between.

Dip candied ginger (fully or only halfway) then place them on a parchment lined baking sheet or a cooling rack to harden.
Allow the chocolate covered candied ginger to harden in the refrigerator. I stored mine in an airtight container in the refrigerator.
