Chocolate Chip Banana Oat Waffles

Last weekend I needed to step away from #nepalearthquake and finish my final research paper. I went to a newly opened crepery and coffee bar called Savor where I had crepes with lemon cream and blueberry compote. It was a perfect sweet breakfast, just what I needed and made me realize that I don’t make sweet breakfast/brunch at home anymore. I do more egg-based savory dishes (here, here, and here)..so its high time I bring pancakes and waffles back into my life. I am using Katie’s Easy Gluten Free Oat Waffles as a base but added chocolate chips and banana, which made it taste like banana bread. I was a little hesitant about using oat flour but the resulting waffles are pretty delicious, soft and naturally gluten-free. They are more like banana bread waffles rather than these crispy ones, just giving you a heads up.

 

 

Compared to all-purpose flour, oat flour is a healthier alternative (hello fiber) and something that can be easily made at home by grinding oats (old-fashion or quick cooking, they both work fine) in a food-processor.

 

 

Chocolate chip banana oat waffles may look like a pretty grandeur affair but if you can spare half an hour in the morning, it’s very doable.  For me personally, I will save it for the weekend so I can slowly sip freshly  brewed tea and enjoy every bite of these waffles without having to rush to a meeting or something. Unlike these classic waffles (which are crispy btw), chocolate chip banana oat waffles does not require separating egg whites and yolks, you simply mix wet and dry ingredients together and ta-da, chocolate chip banana oat waffles will be ready in no time.

 

 

I wouldn’t call these perfect just yet.. they are delicious, don’t get me wrong but they aren’t crispy enough for my liking. I want to try them again by using only 1 banana and adding 2-3 tablespoon coconut oil to make it crispy. If you guys have any suggestions, please let me know. These waffles are pretty sweet by itself, thanks to the banana and chocolate chips therefore, you will only need a very light drizzle of honey or syrup.

Chocolate Chip Banana Oat Waffles
Serves: 7 squares
Ingredients
  • dry ingredients:
  • 1.5 cups oat flour (use certified GF oats and grind them)
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • a pinch of cinnamon
  • wet ingredients:
  • 3/4 cup milk
  • 1 egg
  • 2 ripe bananas, mashed
  • splash of vanilla extract
  • 1/2 cup chocolate chips
Directions
  1. In a large bowl, whisk all the dry ingredients.
  2. In a small bowl, mix al the wet ingredients until well combined.
  3. Gently pour wet ingredients into dry ingredients then fold in chocolate chips. Allow the batter to rest for 10 minutes.
  4. Heat the waffle maker and once it’s ready, pour about 1/4 cup + 1 tablespoon of batter into a lightly greased waffle maker until it turns golden brown.
  5. Transfer it to a cooling rack. Repeat same steps with the remaining batter.
