Caprese Quinoa Salad

Hello Marvelous Monday and that only means one thing – its time to join Katie @healthydivaeats for Marvelous Monday party. After tragedies in Boston and West, Texas this week- I just wanted to say home, relax, and catch up on few things around the house. It was marvelously low-key compared to past weekends in NY & exploring Dallas.

My marvelous weekend included: 
Going to the Dallas Farmers Market for fresh produce & plants 
Gardening my first herbs and vegetable garden on my patio 
Starting to solve 1000 piece puzzle 
Starting to work out regularly –  lifting weights and running on a treadmill


Staying hydrated with fresh cucumber lemon water


a pitcher full of water, ice, cucumber and lemon slices

Eating Caprese Quinoa Salad (recipe:serves 2 )

Ingredients
1/4 cup quinoa, dry  
5-6 cherry tomatoes, halved
3 oz, fresh mozzarella, cubed
3-4 basil leaves, chopped
2 tablespoon olive oil
salt and pepper, to taste
DIrections
-In a small sauce pan,cook quinoa according to the direction on back of the package
-In a bowl, toss all the ingredients together and adjust taste as necessary. May serve immediately but I noticed flavors come well together after letting it sit in refrigerator for couple hours. 
This salad is great by itself but I enjoyed it alongside grilled chicken, turkey-lentil seekh kebab and roasted veggies – oh marvelous is the smell of charcoal.
