Brunch Favorites {Recipe Redux}

For the month of May, Recipe Redux theme was to share our favorite healthy brunch dish.. When it comes to brunch I am always indecisive – half of me wants stuffed French toast with caramel topping while the other half asks for veggie omelet finished with goat cheese. It always a tough one but usually I end up with savory ones and take a bite or two of sweet pancakes or something from the boyfriend – after all sharing is caring right? 

Instead of creating a new recipe, today I am sharing few brunch inspired recipes (sweet + savory) from the past..

 

 

Chocolate Chip Pancakes (whole wheat) always brings a huge smile on people’s face. Make this with a side of ooey gooey scrambled eggs.

Veggie Frittata or anything egg-based always catches my attention. This is a great opportunity to empty out your refrigerator.  

 

 

Take out your waffle maker and make crispy, easy Classic Waffles.It adds a lot of beauty to your brunch table. Serve it with sliced fruits, sprinkle confectioners sugar, or a dollop of whipped cream. 

 

 

Fancy things up with crepes (whole wheat). I served it with cranberry apple compote but since its no cranberry season – I would use berries instead. 

 

 

Simple pop these Egg Muffins in the oven while you make cocktails and other sides. They will come out beautifully in 20-25 minutes.

 

 

Make Blueberry Streusel Scones ahead of time to end brunch on a sweet note. If you are a chocolate lover – Chocolate Chip Banana Bread Scone is going to be your BFF.
