Smashed Egg Sandwich
Smashed Egg Sandwich is an eggcellent option for simple yet elegant breakfast or brunch with perfectly soft-boiled eggs smashed between brioche buns.
Few weeks ago, the boyfriend surprised me with Smashed Egg Sandwich (he came up with the name and all) and now I am a fan. I believe in sharing simple & easy breakfast (or brunch) option on the internet because we all love those recipes, right? Also, it's sometimes fun to see real life brunch situation that is not really styled. Smashed Egg Sandwich literally called for 3 main components - soft-boiled eggs, brioche buns, and seasonings. Let's do this!
We begin by boiling eggs so it is 'soft-boiled'. Making soft-boiled eggs is all about the right technique and patience. We are a big fan of "Momofuku's soy sauce eggs" recipe so that's what we used here (minus the soy sauce part). A lot of recipes I saw on the internet calls for 7 minutes exact however, we stick with 6 minutes 55 seconds and transfer eggs to the ice bath immediately. It works every.single.time!
For the bread - a good brioche bun or something similar works. I am thinking rich-dough and chewy like challah or Hawaiian rolls. You can lightly toast and butter the rolls before smashing eggs so it's runny and simply delicious.
You can use your hand to smash eggs or a knife to slit egg in the middle so yolks run slowly.
We recently discovered something called chicken salt, a savory seasoning very popular in Australia. It's great on fries, popcorn, and eggs (or anything really). We made a batch using this recipe from Reddit which I will share below too in case you want to make it. Chicken salt adds a salty + smoky component to the smashed egg sandwich but I am sure salt, pepper, and paprika will work great too.
Finely chopped onions + green chilies are nice additions to the sandwich; I enjoy the crunch from onions and little kick from chilies. Juicy tomato slices, avocado, or bacon are other combinations you can play around with.

Smashed Egg Sandwich
Makes 2 sandwich
- 4 large egg
- 2 brioche buns or something similar
- 1 tablespoon butter, if desired
- 1/4 cup chopped onions
- 2 green chilies, finely chopped
- 2 teaspoon chicken salt
- Soft-boil 4 eggs using your fav recipe.
- Toast brioche buns lightly and spread butter if desired.
- Put 2 eggs between buns and sprinkle chicken salt, onions, and chilies.
- Use your hand to gently push eggs to smash until yolks run out. Alternatively, slice eggs in the middle to allow yolks to pour out.
Chicken Salt Recipe (from Reddit):
In a bowl, combine 6 tbsp table salt, 3 tsp chicken bouillon, 3 tsp garlic powder, 3 tsp sweet paprika, 1 tsp white pepper, 1 tsp celery seed. Combine the ingredients well and store it in an airtight container.
