I am a self-claimed popsicle queen; this year I have turned everything from smoothies to overnight oats into a popsicle. Let's be honest, popsicles are fun + nothing really beats a refreshing popsicle on a hot summer day! Popsicles are super easy to make and you can get creative and come up with endless flavor options from fruity, creamy to boozy. Also, they are customizable to meet your dietary needs and allergies. I am sharing 5 popsicle inspiration that I absolutely adore and hope you will make them before Summer ends.

Vanilla Rose Lassi Protein Popsicle : I simply turned vanilla rose lassi protein shake into popsicle and it works like a charm! If you are looking for a high protein snack or a treat, these are perfect.

If you do not want to make a full-size popsicle, give "Pistachio Cardamom Kulfi" a try using 2-oz dixie cups.

Few tips on making popsicles:

  • I am using these popsicle molds via Amazon (affiliate link) and it's been going strong. If you don't want to buy one just yet, Dixie cups or something similar will work. See: Vegan Vietnamese Coffee Pops.  
  • I'd suggest using liquid sweetener or make sure granulated sugar is dissolved in liquid before adding to the mix.
  • If making layered popsicle, make sure each layer freezes completely before adding another layer.
  • To remove popsicles from the mold - you can either run warm water outside the popsicle mold for few minutes or leave popsicles out of the freezer until popsicles are loose enough to be removed. I have also read that using a towel dampened with warm water to help remove popsicles from the mold.
