Savory Yogurt Parfait
Savory Yogurt Parfait is a great option for quick, savory breakfast or an afternoon snack! It is packed with protein and other nutrients and is naturally gluten-free!
Sleep is probably the best cure for everything. Wouldn't you agree? When I am drained, stressed, or just bothered by things - I just slip into the comforter and forget everything else. The sheer amount of energy and relaxation I get is unfathomable. I am telling you all this because I was supposed to post "Savory Yogurt Parfait" yesterday instead I listened to my body, had a restful night, and the world didn't fall apart. In trying to be consistent with posting 3 times a week, there are days when I wake up before the crack of dawn or you will find me editing photos until my eyes can no longer stay open, all of which are not healthy at all.
If you are on the same boat as me, I could use your advise on how to balance full-time job and be consistent with blogging, promoting on social media sites while keeping your sanity. I promise to send you a batch of Quinoa, Chocolate Chips, Banana Cookies or if you live close by, you are welcome to enjoy these Golden Milk Popsicles and Savory Yogurt Parfait while we pick our brains on balance.
I am pretty obsessed with Homemade Granola in my Yogurt Parfait as a quick snack/breakfast...So using the same concept, I switched things up a little bit and made Savory Yogurt Parfait. It is layered with roasted chickpeas (I used the ones from the Good bean but you can make your own too) finely chopped veggies, and chaat masala. It's like chaat (famous Indian street food) in some sense, maybe it's the yogurt, chickpeas and chaat masala.
Remember the chaat masala I used for Tangy Fruit Salad? It's a lovely spice mix that is available at Indian grocery stores - it's tangy and little spicy and great on fresh fruits and vegetables. If you don't have access to chaat masala, you can probably get away with little salt, cumin powder, chili powder, and lemon juice although it won't be exactly the same.
You can enjoy Savory Yogurt Parfait as a breakfast (if you are a savory morning person) or as an afternoon snack. It's got the protein from Greek yogurt & chickpeas and crunch +nutrients from tomatoes, cucumber, and radishes.
Savory Yogurt Parfait

- 1/4 cup plain, Greek yogurt
- about 1./4 cup roasted chickpeas
- 1 small cucumber, chopped
- 5 cherry tomatoes, halved
- 2-3 radishes, chopped
- 2 teaspoon chaat masala
- In a glass as shown above, add 2 tablespoon yogurt followed by 2 tablespoon chickpeas, little cucumber, few tomato slices, and radishes. Sprinkle chaat masala evenly over it.
- Repeat again with the remaining ingredients.
