Virtual Coffee Date
If we were having coffee this morning, I'd tell you that lately I have been been eating my breakfast-on-the go. Thank god for smoothies, energy bars, and the beloved nutty, seedy, and banana(y) toast. If we were having coffee this morning, I'd tell you that grad school is kicking my butt. I have until 5 pm to decide if I want to drop my class since I am not doing so well. Stubborn part of my brain says "You Can Do It"....But my lazy voice tells me "I need to take it easy". SEND HELP before 5 pm (central time). If we were having coffee this morning, I'd tell you that I met my cousin from Australia after 12 years! It's been a decade + 2 years - crazy to think of it but we bonded right away. If we were having coffee this morning, I'd tell you to read this post on "feeling jealous on the internet...." if you already haven't. If you have an online presence or you are on the social media - jealously happens but don't let those glamorous photos, thousands of followers, happy marriage with pretty babies, flawless body etc get to you. I have those days too but I always remind myself that "everyone has their own struggle" and most people don't share photos of dirty dishes, mess in the house, ugly arguments, and not-so-picture-perfect moments on the internet.
If we were having coffee this morning, I'd tell you that I am visiting Boulder/Denver, New York, and Orlando in March, April, and May respectively. So if you have recommendations for where to eat, things to do etc - start your list. Thank you! I think it sets a positive, calm intention for the day.
If we were having coffee this morning, I'd tell you that I am already mentally meal planning for the week. So far, I want to make tofu palak (remake and post here with decent photos), quinoa breakfast bars, aloo bodi tama, pasta bake, and maybe daal. I am on a mission to clean up my pantry because it has never ending supply of random things.
