Bircher Museli

It feels like I am on a never-ending dessert train this holiday season. I have savored the very last bite of peppermint chocolate chip gelato and worked my way emptying my favorite cookies from a tin. Overall it’s been a wonderful ride but I think I am ready for a little break.
Oatmeal is my go-to breakfast of choice whenever I need to jumpstart my system. Since I am not too crazy about cooked, hot oatmeal, I prefer the chilled overnight kind. I have shared a similar  chilled Swiss oatmeal before, this is a different variation with chia seeds and kiwi.

Muesli was introduced around 1900 by the Swiss physician Maximilian Bircher-Benner for patients in his hospital as a part of a healing therapy. The original recipe consists of oat flakes, raw apples, condensed milk, nuts and lemon juice (source).

Bircher Museli
for 2 servings
  • 1 cup oats ( I used old- fashioned but rolled oats is fine too)
  • 1/2 cup 100% orange juice
  • 1/2 cup almond milk (or use milk of your choice)
  • 1 tablespoon chia seeds
  • 1 tablespoon honey (use more or less depending upon your taste)
  • 2 tablespoon chopped nuts (I used mixed variety, roasted, salted)
  • 2 kiwi, peeled and thinly sliced
  • In a bowl, combine oats, orange juice, almond milk, and chia seeds. Cover it and let it sit overnight.
  • Divide the oat mixture equally in two small bowl or a glass then top it with honey, nuts, and kiwi.
I hope you guys are soaking up the holiday festivities with your loved ones this season. However, please don’t forget to hop back into the healthy eating train before its too late. Wishing everyone a Merry Christmas. Now on to the giveaway.
Blue Nile is giving away a sterling silver necklace to one of my lucky readers as a part of their “Get One, Give One” campaign. It was very generous of them to send me one as well. I absolutely loved the minimal design on this necklace. If you are still looking for a great last minute gift, use the code BNHH10 for 10% discount (good until 12/31).
