Avocado Mango Fruit Roll-Ups | No Dehydrator Method

Avocados always make its way into my grocery cart – oh how I wish I could freeze you before you start costing me an arm and a leg. When I received an email from Recipe Redux challenging us to use California Avocados into something spectacular – I almost fell off the chair with excitement because I avocados and the California Avocado Commission were providing us a box of fresh California Avocado for a sample.

 

 

Besides being a nutrient-dense fruit with nearly 20 vitamins, minerals, and phytonutrients, per one oz. serving (1/5th of the medium avocado), I can’t stress enough their versatility and won’t ever get tired of their unique flavor and smooth texture. 

I have made Vegan Chocolate Avocado Banana Bread and Peanut Butter Avocado Cookies ideal for breakfast, snack, or dessert. Let’s not forget about those crispy on the outside, gooey in the inside avocado fries (baked)

 

 

I eat guacamole like its my job – remember the time I told you how to feed guacamole to an army, or the time I made that Spicy Avocado Spread. Mexican dishes are incomplete without avocados – its a MUST on tostadas. Don’t be surprised if you find me eating whipped guacamole by the spoonful. Avocados are also good for making smoothies and are needed for your California Rolls.

I felt like I had exhausted all my options with avocados and needed a big bowl of guac and chips for brainstorming..finding unique possibilities. If you are ever in doubt, the answer to avocado is guacamole, always.

 

While brainstorming eating guac and chips, I thought why not make a fruit leather with avocados.. a healthier alternative to sugary ones, a tasty fruit treat for kids or picky adults..another way to enjoy avocado without having to worry about going bad like guacamole..Simple, Healthy, Delicious. 

 

 

Avocado by itself is bland and needs that oomph factor to bring out its best – don’t you agree? Mangoes, lemon juice, salt, and kick from chili pepper sounded mighty delicious to me. I was slightly dubious and worried that I may lose the beautiful California Avocado and perfectly ripe mangoes over this risky fruit leather experiment – after several hours of waiting impatiently (as its my forte) and more guac and chips- I got my fruit of labor. Tangy, slightly spicy avocado mango fruit roll-ups. 

 

 

Avocado Mango Fruit Roll-Ups

makes enough for 1.5 baking sheet 

Ingredients

2 California Avocado (peeled, flesh scooped)
1 large mango, ripe (peeled, flesh scooped)
lemon juice ( I used about 4 tablespoon)
salt (per taste)
red chili powder (per taste)

Directions

– Preheat the oven to 175F
– Blend all the above ingredients until it turns into a smooth puree.
– Adjust lemon juice, salt, and chili powder based upon your taste, sweetness of mangoes, and how tart you want your fruit leather)
– Line a baking sheet with parchment paper. Using a spatula, spread a thin layer of avocado, mango puree into the tray making sure they are spread evenly.
– Let it bake for 3-5 hours until the fruit leather is firm, dry and evenly done.
– Allow it to cool for little bit then using a knife or pizza cutter, cut them into stripes, squares or any desired shape. 

Note:
– Make sure the puree is spread evenly. Mine was slightly uneven, mainly on the edges so it did not set properly (you can see at the picture above). I cut those edges out.
