I made this apple cinnamon buttermilk quick bread a couple of weekends ago and completely forgot to share it with you guys. The recipe is adapted from thekitchn(there are 10 other variations). The resulting bread is tender, not too sweet and has apple chunks smothered in cinnamon. It’s a pretty festive bread, great for a breakfast and afternoon snack. But if you are like me slather some cookie butter and you can call it a dessert too.
I like to store my bread in an airtight container or Ziploc bag in the refrigerator once its completely cooled down. How do you guys store yours?
If you don’t have buttermilk at your disposal ( I never do), here are some ways on how you can substitute buttermilk. This is what I normally do : lemon and milk. In a 1-cup measuring cup, add 1 tablespoon of fresh lemon juice. Top the lemon juice with regular dairy or non-dairy milk (taste is slightly different though). Stir and let sit for two minutes before using it.
1 cup all-purpose flour
1 cup 100% whole wheat flour
1/4 cup white sugar (use 1/2 cup for sweeter bread)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2 tsp + 1 tsp cinnamon
1 cup buttermilk (or use these substitutions)
1 large egg
1/4 cup (melted) + 1 tablespoon (not melted) unsalted butter, (or use olive oil, or vegetable oil)
1 cup diced apple + few more slices
Directions
1. Heat the oven to 350°F.
2. Spray with nonstick cooking spray a standard 9×5 loaf pan.
3. Whisk together the both flours, sugar, baking powder, baking soda, 2 tsp cinnamon and salt in a medium mixing bowl.
4. In a separate bowl, whisk together melted butter, buttermilk, and egg.
5. Pour the liquid ingredients over the dry ingredients. Gently stir and fold in only cut apples into the batter just until everything is combined forming a batter.
6. Pour the batter into the prepared pan.
7. Arrange slices apples on top of the batter, then mix 1 tbsp butter and 1 tsp cinnamon together and sprinkle on top. Lightly press apple slices into the batter.
8. Bake for 45-50 minutes or until the toothpick inserted comes out clean.
9. Cool the loaf in the pan for 10-15 minutes then remove, slice, and enjoy. Let the loaf cool in the pan for 15 minutes before removing. Slice then enjoy.
Note:Feel free to add chopped nuts (1/2 cup) to the batter in step 5.
