You guys, graduation just got real! I had a slight hiccup and wasn’t allowed to graduate, almost..but things are now under control. Lunchbox Chickpea Salad : This is my go-to for lunch and even dinner (mix quinoa to bulk it up more). It’s naturally gluten-free, vegan, and very flexible recipe that requires a bowl & 10 minutes of your time. Stovetop Granola : I can’t remember the last time I bought store-bought granola because I don’t need to. This full-proof granola is super easy & flexible when it comes to nuts, seeds, and dried fruits. Fits gluten-free and vegan lifestyle. Here is a quick video on how to make yogurt granola parfait! For a seasonal twist – try apple pie parfait. Weeknight Chicken Curry : This is my idea of a weeknight meal meets comfort food under an hour. Make sure to serve it with freshly cooked rice or naan. Great for leftovers too. Restaurant Style Red Thai Curry (with vegetarian, vegan option) has just made the list.Pumpkin Pie Energy Balls:If you are looking for an afternoon snack or something quick pre-workout – you’ve got to make these Pumpkin Pie Energy Balls. These no-bake, vegan-friendly, gluten-free, one bowl balls are my absolute fav! [Tweet “Sharing my 10 Top Favorite Recipes from the Blog! #rdchat “]Easy Thin Crust Pizza:We go way back circa 2013. Do I need to say more except that it’s a weekly tradition in my house….Instant Iced Latte:If you don’t have a coffee machine // don’t want to spend $$$ at fancy coffee shops // love iced latte in general – please give this recipe a try because the non-coffee loving boyfriend is a fan (which secretly makes me happy, just don’t tell him). Easy Chicken Kebab: This is my default weeknight dinner when I don’t know what else to make..I can use it as a wrap, with rice, or on a bed of greens. The combination of sweet potatoes, chipotle and turkey just works..and I have substituted turkey with lentils before which is a great option for vegetarians/vegans!Stovetop Popcorn:Why settle with the microwave stuff when you can make your whole grain, nutritious snack in less than 5 minutes?Chia Pudding // Overnight Oats:If breakfast on-the-go is your style, you are gonna love these portable breakfast options such as chia pudding & overnight oats.
