Lunchbox Chicken Avocado Salad Wrap is a healthier take on classic chicken salad. It is quick and a simple recipe to add protein for your lunchbox.
I pack lunch pretty regularly and it’s mostly leftovers or a hearty salad, which can get boring sometimes. If you are on a lunch rut, you are going to love these Lunchbox Chicken Avocado Salad Wrap made with Tysons Refrigerated Fully Cooked Chicken Breast Strips. Most everyone I know are always looking for simple, easy recipes with a healthyish spin because eating lunch outside can add up pretty quickly + if you can make a healthier cafeteria-style wrap, why not give Lunchbox Chicken Avocado Salad Wrap a try ?
The idea to make Lunchbox Chicken Avocado Salad Wrap comes from my Smashed Chickpea Avocado Sandwich (if you are following a vegan or plant-based lifestyle, this one is for you) but not everyone likes chickpeas & chicken is more of their jam. I do not strictly follow any lifestyle and I like meat but dealing with raw chicken is not my favorite thing to do. I was pleasantly surprised (and little excited) when I found out Tysons Refrigerated Fully Cooked Chicken Breast Strips at Kroger’s refrigerated section. Yes, at the refrigerated section next to all the lunch meat. Don’t be like me going around the store looking frantically in the frozen section. Lunchbox Chicken Avocado Salad Wrap is a healthier take on classic chicken salad as we are substituting mayo with avocado and plain non-fat yogurt (Greek yogurt is fine too). Both avocado and yogurt lends a nice texture but I have added some tips for dairy-free version below. Tysons Refrigerated Fully Cooked Chicken Breast Strips are flavorful on it’s own so I didn’t need much except for little onion, salt, pepper, lemon juice and red chili powder for some heat, which is entirely optional. The whole process takes less than 10 minutes from start to finish so there is absolutely no reason for you to not try Lunchbox Chicken Avocado Salad Wrap right away. As much as I try to meal plan and gets thing prepared ahead of time, when I have a busy schedule, convenience + ease is of prime importance. Tysons Refrigerated Fully Cooked Chicken Breast Strips will definitely come handy not only for Lunchbox Chicken Avocado Salad Wrap but it can also be used as a protein for your salad, topping for your pizza, or with quesadilla.
PS. Tysons Refrigerated Fully Cooked Chicken Breast Strips has a new packaging with re-sealable zipper for convenience & lower cost per ounce which is always a good thing. Chicken avocado salad is delicious on it’s own and can most definitely be enjoyed with crackers, as a wrap (which I am doing today), or as a sandwich. Feel free to use the type of bread or wrap you like. Feel free to serve Lunchbox Chicken Avocado Salad Wrap as a full wrap or you can cut them into pinwheel style sandwiches.
If you are new to making a wrap, here is a quick video:
