I have been meaning to share “Mango Lassi Popsicles” ever since I made them, which was almost a month ago. It’s brutally hot here so, naturally all things cold and refreshing are right up my alley these days. I hope you guys are not too tired of popsicles (golden milk, balsamic roasted strawberry) and iced latte/tea; as of late, I am trying to stay away from the stove as much as possible, so please bear with me as I share these type of recipes. Come Fall, we will talk about comfort food I promise. Mangoes are delicious on it’s own but if you need a refreshing and healthy treat post-workout, after-school, and even as a dessert. – naturally sweetened, 3 ingredients creamy Mango Lassi Popsicles are perfect for that! While growing up, every Summer I looked forward for mangoes as we would get unlimited supplies from a relative who had mango trees in her backyard. We would mostly eat Ataulfos, Alphonse, and Kesar (more mango types) and my grandmother made chutneys with unripe ones. Good old days of eating mangoes…with juices dripping all over. Lassi, a blended drink of yogurt, water, spices like cardamom, black pepper, cumin, or sweetened simply with sugar or fruits are very popular in Indian Subcontinent. Mango Lassi Popsicles are inspired by the same concept except that it is in frozen form and sweetened with mangoes only. If you have never tried lassi before, you should go to any Indian/Pakistani/Nepali restaurant – they will most likely have it..if not make Mango Cardamom Kefir Lassi in your own kitchen!
Lassi from the restaurant is sweetened with sugar or mango pulp..which can be cloyingly sweet sometimes. I used uber ripe mangoes here, which was sweet on it’s own and didn’t need additional sugar. However, that could change depending upon the mangoes you have.
Pro Tip: You can find super flavorful mangoes for pretty decent price at large Indian grocery stores esp during Summer – I go to Taj Grocer’s & Patel Brothers here in DFW area. People from Indian Subcontinents are pretty picky about their mangoes, so I know Indian grocery stores will carry the ones to meet their customers expectations of mangoes. There are soooo many types of yogurt options out there…I always say, stick with the plain kind as it doesn’t contain additional sugar. Now there is a push towards whole milk (or full fat) dairy products rather than the fat-free variety which I totally support. Fat-free products tend to have added sugar or filler ingredients to make up for that lost fat..and also it doesn’t keep one satiated for long. Depending upon your overall eating habits and risk factors for cardiovascular disease, I would say go for either 2% or whole milk dairy products. For extra protein and creaminess – Greek yogurt is a great option as well. But again, read your ingredient list!!! For Mango Lassi Popsicles I used 2% plain yogurt.
- 2 large, ripe mangoes, pitted and flesh scooped
- 1 cup 2% plain yogurt
- 1 teaspoon cardamom powder
- sugar, optional only if needed
- In a blender, combine mangoes, yogurt and cardamom until it makes a smooth mixture.
- Taste and adjust sweetness by adding sugar and cardamom powder as needed.
- Slowly pour the mixture into a popsicle mold and freeze overnight.
- Remove from the freezer and run warm water for a minute or so to help release popsicles from the mold.
