I love chickpeas and if you are regular reader, you probably already know that. They are one of my favorites legume – it is super inexpensive, versatile, and nutrient rich which is why I am dedicating a whole post on chickpeas. PS. 2016 is the year of legumes, so let’s give these little nuggets all the attention it deserves – chickpeas or garbanzo beans belong to the legume family and are a wonderful source of plant protein, providing 15 grams per each cup. It is also a great source of fiber and other vitamins and minerals. A cup of cooked chickpeas provides 12.5 grams of fiber — half of the daily fiber intake recommendation for women or one-third of of the daily fiber recommendation for men. Salads: Make yourself a big batch of chickpea salad for the week such as Lunchbox Chickpea Salad.
Soups : Throw a can of chickpeas to your favorite soup..It adds a nice texture as well as boosts the nutrient content of your soup. Try this one pot Chicken and Chickpea Soup!! Sandwich: If you’ve never tried Smashed Chickpea + Avocado together on a toast – you are missing out! Roasted Chickpeas: Have you heard about company the Good bean? You can buy chickpeas dried or canned at most grocery stores. If using dried chickpeas, make sure to presoak chickpeas ahead of time. Here’s a straight forward recipe for cooking dried chickpeas on a stovetop. As of late, I am into slow cooker chickpeas!
Canned chickpeas are lot more convenient, quick and a nutritious staple to add to your pantry. When possible, get the low/reduced sodium and BPA-free kind and rinse chickpeas before using to discard sodium/preservatives/chemicals.
