The girl behind Strength and Sunshine, Rebecca is a “student, yogi, fitness lover, celiac, and hard-core foodie” and I am so excited to feature her as our blogger of the week. She has a strong passion for finding the beauty and happiness in life by living a healthy lifestyle. She defines happiness as sunshine, stepping onto her yellow yoga mat, waking up at the crack of dawn, mugs of hot tea or cups of black coffee, and of course cooking up delicious plant-based and allergy-friendly whole foods! I met her on the internet not too long ago and have really enjoyed her positive energy and informational posts on her space Strength and Sunshine. Let’s get to know her a little bit more, shall we? What is a typical day in the life of Rebecca like? I’m a college student this year so my “day in the life” has changed a lot since the summer! I always wake-up at 4:15am (no lie!), do a morning workout, then I’ll start my blogging duties while eating breakfast and getting ready for class. I have class Monday-Thursday during the week. I always make a trip to Starbucks when I shuttle into the city and form there my day progresses through class, lunch (which I can luckily enjoy back in my dorm), more class, maybe workout depending on the day of the week, have dinner, more blogging, studying or homework, and then lights out and eyes closed by 8:30pm. Nothing exciting, but it’s working!
What is the story behind your ‘yellow mat’? I got this lovely yoga mat after my first original pink yoga mat turned to shred two years ago. I actually dedicated a whole post to the mat which you can read here!
Sweet tooth or savory? I am not a fan of desserts or overly sweet things. However, that doesn’t stop me from always having my chocolate in the morning! I feel like I crave something sweet in the morning, but as the day progresses, I am all the savory things! It’s a hard one since every sweet and savory dish is so unique in taste! I need both!
What are some of your favorite recipes you’d want to tell us about?Some of my favorite recipes on the blog are: Vanilla Pear Quinoa Granola Ultra-Fluffy Vanilla Chickpea Pumpkin Pancakes, Slow Cooker Salsa Chicken, Indian Christmas Rice, Lentil Quinoa Meatball Bolognese and Zucchini NoodlesWhat kind of challenges do you face being a Celiac? As a Celiac veteran now (I celebrated 5 years back on November 3rd), I know my way around my restrictions. Even here in college, I was able to quickly work with my dining hall staff to help me out with some dinner options I can have specially made. Otherwise, I am able to still make all my own food right in my dorm. The only thing I still struggle with is dining out (which I rarely do). It can be scary since you never know if cross contamination occurred, etc. I also have a severe soy allergy (my throat can close up and it throw my digestion is to major distress), so that throws another concern in there too! But overall, I am fully confident in taking care of my allergies and Celiac effectively and love that I can help out and share my tips and knowledge with others who may struggle now!
If you have friends over for dinner, what would you prepare for them? I’d make my go-to most famous vegan dish amongst my family. My Vegan Stuffed Portabello Mushrooms! Lentils, hummus, veggies, and spices, all filled and baked in a large portabello mushroom cap! They are delicious and so easy to whip up! I’d serve them along side some delicious Raw Balsamic Tahini Beet Noodles!Any tips/suggestions for anyone looking to start yoga? You can check out my yoga page for every online resource and website you could possibly need! But my #1 piece of advice is to NOT be scared or intimidated. You just need to get on your mat and FLOW! No one (but you) cares if your a beginner and have no idea what you’re doing. I cultivated my advanced 4 year practice now, all on my own, right in my own home. As long as you dedicate yourself and truly want a practice, There is nothing stopping you. Everyone’s practice is different, so never compare, ever. Yoga is about finding your style and what makes your body and mind feel whole, fresh, new, and excited!
What will I find in your fridge right now? Ha! My dorm room fridge. I share it with 3 other girls, but only one of them uses it! So there is tons of room. I have all my nut butters, nuts, condiments on the door. Then the produce baskets are filled with fresh veggies and fruit, On the shelf I have 4 Silk Unsweetened Almond milks (I have to stock up since the grocery stores around here are unreliable!). The freezer, I have so many loaves of bread, tortillas, and extra containers of hummus (which reminds me I need to take one out to defrost!). Oh and some Engine 2 veggie burgers (so good since I can just heat them in the microwave in my room!).
Are you a planner or a go with the flow kind of person? I am a planner and I hate change, haha! I like to know what I have to do and when I have to do it! I also do not procrastinate! You will not find me writing a 10 page paper at 3am the night before it’s due! But I have to be that way with my work, blogging, etc. Otherwise life would be way to hectic and quality is #1!
What are some of your favorite social media channels in promoting your blog? any tips/tricks? I hate social media! I only have it because I’m a blogger (a necessary evil!). Each one I like and dislike for different reasons. I actually love Facebook the most! Even if bloggers say it’s horrible and dieing. If you utilize and engage on your page, it can work. But I also love Facebook for the numerous groups I’m in. Most days (during the week), the top traffic referrer on my blog is from Facebook! So my tip is to engage, join groups, and promote those posts everywhere and to everyone!
If we were having hot tea right now, what would you tell me? I would tell you how ready I am for spring and summer! Sunshine and warmth are my favorites things and I live for them. I can’t wait to get back to running outside, taking walks, and of course summer break back home! I have major plans for the blog, recipes to create, and ideas to finally take shape!
