Virtual Coffee Date {Roasted Cauliflower & Green Peas}

If we were having coffee this morning, I’d bring my first ever chocolate tartlet to share with you. Well, the crust isn’t the best but I promise rich dark chocolate filling will make up for it.. 


If we were having coffee this morning, I’d tell you how Bailey keeps me occupied, entertained, and how she often tests my patience. I am working very hard on the latter these days.

If we were having coffee this morning, I’d remind you about google reader retiring on July 1, 2013 which I am still sad about but oh well, now I am moving on to Bloglovin, hope you will come find me there.

If we were having coffee this morning, I’d share pictures & recipes of my fancy meals – just kidding..lately meals have been fairly simple. One of those recipes include roasted cauliflower with green peas (recipe below) which has become very regular with a side of quinoa, rice, or couscous. It’s great for the lunchbox next day too. 


If we were having coffee this morning, I’d ask you for some of your “hostess with the mostess” tips for sushi & sake night for few friends on Sunday..I am trying not to stress too much or over plan things which I am very famous for.
 

If we were having coffee this morning, I’d tell you how I went kite flying again and turns out it’s a great de-stresser esp. if you have a new puppy on hand or a party planning to do, both or none – either way its fun. I’d encourage you to try it on a beautiful, slightly windy day.

This is one of those recipes you can throw (not literally) in the oven – go walk your puppy, catch up on shows, or relax while it will come together with very little effort and bold on flavors!

Roasted Cauliflower & Green Peas
Serves: about 3-4


Ingredients

1/2 head of large cauliflower, washed and cut into florets
1 cup green peas, frozen (may use fresh)
2-3 tablespoon olive oil
1 heaping tablespoon cumin + coriander power
2 teaspoon red chili powder
salt, to taste
1/4 cup Cilantro or parsley, chopped 

Directions

- Preheat oven to 400F
- Line baking tray lined with parchment paper or spray cooking oil
- Place cauliflower and peas in the tray, massage with olive oil, cumin, coriander, chili powder, and salt. Add cilantro or parsley leaves. 
- Bake it uncovered for 35-40 minutes or until it is soft stirring the mix once or twice in between.

    Yum, I’m always looking for new ways to cook cauliflower and I love how simple this recipe is. Great job on the tart by the way, it looks amazing!

    I would tell you that Bailey is an absolute cutie and that I’d gladly share that chocolate tartlet with you! I can’t even remember the last time I went kite flying, but I -do- remember loving it when I was younger. And I’m really sad that Reader is biting the dust as well. I’ve been using Feedly, though, and I’m liking it quite a bit.

    That tart looks so good! And really as long as the filling is delicious, who cares!

    Have you ever made filled puffed pastry bites? My MIL makes them and they’re so good. She takes a samosa like filling and makes little puff pastry packets. Would make for a great appetizer!

    If we were having coffee this morning, I probably wouldn’t telling you too much..because i’d stuffing my face with that tart! I’m just kidding but it looks so delicious- very impressed! In between bites, I’d tell you that this weekend/week is super busy because of my cousin’s engagement and family visiting in town…and I’m trying to keep calm with balancing work with all the festivities :)!

    Bailey is sooo cute. My boyfriend is saying “aww” behind me.
    I’m using a combo of feedly and bloglovin. I check them both when I’m looking through blogs. I haven’t really decided yet. I like how bloglovin sends you an email at the end of the day!

    OK, a few things:

    1. OBSESSED with your sweet puppy. I have a little Maltese mix, and I know they’d be best of friends!
    2. I actually just posted a new favorite Asian recipe for Japanese veggie fritters – would be a great app!
    3. Roasted cauliflower is one of my absolute favorite things to eat, and yours sounds delicious!

    If we were having coffee I’d tell you I’d had plans to kidnap Bailey but then reminded myself how heartless that would have been. Really, though, how adorable is she? That photo had me awww-ing non-stop. Thanks for thinking of my request for a bazillion puppy pictures :).
    Not like I had ever prepared it myelf but seaweed salad seems like a popular Asian appetizer so maybe go with that?
